Okra

Okra is what makes gumbo, gumbo.:)

  • Yum!!!! Don't make beef soup without it. Where I grew up, we made a delicious succotash type dish starting with frying a few strips of bacon then adding corn, lima beans, and okra. (Other fresh veggies were sometimes added too.) So good. I even like the slippery boiled and buttered okra.
  • They made a wonderful musical about that stuff- Okrahoma!
  • I like it battered and fried, but am too lazy, myself. I just steam it and salt it.
  • Trick for okra is not to add any water after initial washing (when whole). Preferably dry them out in a strainer. So, no washing after cutting, no water while sauteing or pan-frying. UNLESS it's okra soup.
    Great for digestion.
    I was at a fruit shop once & got some packets of okra. It was a slow day & the lady cashiers in 2 adjacent lanes started talking about okra & how slimy it can turn out. I told them about my trick. Both were amazed that a guy was giving them cooking tips, but they said they will try.

  • Lightly battered and fried was the method of choice of family in the South when I was growing up, well before I was introduced to gumbo. Not a great fan of vegetables back then, I did look forward to fried okra when we visited the primary okra household.
